Origin & Growing Conditions
This coffee is grown across 24 farming communities in the VI Frailesca region and Sierra Mariscal, within the Sierra Madre de Chiapas. Cultivated at elevations between 1,200 and 1,800 metres, the farms benefit from the diverse microclimates of the El Triunfo Biosphere Reserve. Here, shade-grown polycultures support biodiversity while providing stable livelihoods for local producers.
Decaffeination Process
Decaffeinated using the Mountain Water Process, developed by Descamex in Córdoba, Veracruz, this coffee undergoes a completely chemical-free caffeine removal. Pure water sourced from Pico de Orizaba is used to gently extract up to 99% of the caffeine, while preserving the coffee’s natural sweetness, clarity, and aromatic complexity.
